Broccoli Pie

Broccoli Pie is a great dish to make for guests, because it looks impressive and tastes great, but is so easy.  This evening I made a recipe that I created during my college days, and it's a favorite weeknight dinner.  This basic recipe could be altered in may ways- substitute whatever vegetables you have on hand, or add cooked shrimp or cooked chicken.  The next time I make this, I plan to use Boursin instead of the cream cheese for more garlicky flavor.  Enjoy!


1                   9-10" pie crust unbaked (Marie Calendar’s frozen is quick and good).
5-6 cups       broccolli, chopped 
1-2 cups       onion, chopped (about 2 medium onions).
2                   large cloves of garlic, chopped
2T                butter
2T                flour
1 cup            milk
1                   8 oz. pkg. cream cheese
1 cup            cheddar cheese, grated
dash             cayenne
to taste          salt and pepper

Saute the broccoli, garlic and onion together until just tender.

Meanwhile make the cream sauce:  Cook the flour with the butter for a few minutes, and then slowly stir in the milk.  Season with salt, pepper and cayenne, and cook for a few more minutes until thickened.  Stir in the cream cheese until melted.

Combine the sauce with the cooked veggies and pour into the crust.  Top with the cheddar cheese.

Bake at 350 for 35-45 min.
